In a Rut?

So with my new faking it till I make it attitude I have a few odd and ends I wanted to ask this week.  I think a good place to start with would be....what have you all been cooking for your family? Do you find yourself in a rut?  I do . I find myself cooking things over and over.  I think one of my main problems is...I am selfish.  I have to watch my sugars very closely.  Being on the medications I am on my sugars have taken a hit.  I have been told I am one bite away from insulin..Oh wow that makes it pretty clear.  So I find myself knowing if I cook these amazing meals filled with carbs I will end up eating them.  First of all I am a carb lover BUT also I am a comfort food eater.  I love nice thick cheesy , friend, yummy carb filled dishes.  I know there are TONS of amazing LC meals out there.  I guess I have become a tad lazy lately.  I know I sound awful, huh? 

So what is everyone feeding their families?  Any great recipes?

I am definitely a huge carb lover, too! Problem I'm having is my hubby travels about 4 days out of every week, so it's just my youngest daughter and me. I have a real hard time coming up with things to prepare for us to eat. One thing we do love is Salmon Patties. My grandma and mom used to make them all the time. You take a can of Pink Salmon and mix together with about a half a sleeve of saltine crackers and stir in one egg. Salt and pepper the mixture to taste. Form into patties (like hamburger patties) and fry in pan of Canola Oil until golden brown on both sides. I like soy sauce on mine and I serve a side of brown rice with them...YUM!

I am in a rut too. It's called chicken! Last week I challenged myself to not cook chicken all week & I did it & it was so nice! I made boneless pork ribs in the slow cooker with vinegar, molassas & they turned out so good!

white chicken chili! There is a great recipe for it on the Mayo Clinic's web site. They also have a lot of other recipes and you can search for recipes with different dietary requirements such as low carb or low sodium, etc. All the ones I have tried have been good.

Are you a mind reader or what?,LOL! I am so in a rut..its called spaghetti. My family has taken to calling it the old "spag"! I'm looking into some slow cooker recipes, so I'll have to let you know. I think it would be great to throw something in there and have it cook all day and get home and have it ready.
